Changing 8620 print settings from ipad

I purchased an HP Officejet Pro 8620. I connect to it wireless from an Ipad3. I downloaded the HP printcenter and the eprint app

I want to be able to change the actual print settings ( Black vs Color, quality, etc. I do not see in any of the HP tools where you can change these types of settings. Is this possible to do from an ipad using HP's tools or any other tools available.?
